I’ve fallen into the great summer hole. It was hard but I managed to climb out and share these amazing cookies, because you absolutely need them in your life. But first… a little recap, because it’s been a while.

My children are apparently fish. They’ve been in the pool everyday since starting summer break, except one… it rained and was too cold to swim. That didn’t stop them from asking though! It’s become part of our daily routine and I hope we’re able to keep up with that as much as possible.

I picked up a shark float a couple weeks ago, for the kids to use. I decided to give it a try yesterday. Lemme just say, they’re so much harder to ride or float on than they look. I’d say my balance is pretty good, but I tipped over super fast. Oh well! It was fun and definitely funny…for myself and everyone else. I’m absolutely obsessed with my donut float though. If you’ve been eying them but have been resisting or have just been on the search for the perfect float, this is totally it. It’s a perfect donut/ring float for an adult and it’s fun. Super comfy. I’ve actually been eying others but I’ll try to resist buying more…at least for this year.

Also, can we discuss deer flies? They’re horrible little beasts. One took a chunk out of my ankle and it hurt SO bad. It seriously itched and ached for days. Next to mosquitoes and spiders, I’d love for deer flies to vanish. I would happily live without them.

For a while I’d been searching for a nylon crossbody bag to use this summer that would hold a little bit more than I usually carry, but not a ton. Nylon because it’s super lightweight and easy to clean. I still like relatively small bags most of the time, so it was proving semi-difficult to find the right one… and the price. Seriously, why are bags so expensive? Don’t tell me that the more you spend, the better the quality because I know that isn’t always true. Sure, sometimes it is but definitely not always. I ended up discovering a nylon bag by Dooney & Bourke that seemed to be exactly what I’d been looking for, this one to be exact, in case you’ve been on the hunt too! Bonus, it was marked down $50 for a short time – some kind of special deal they were having. Totally couldn’t pass that up. It must’ve been meant to be.

I’m looking for fun summer reading suggestions! What have you read lately that you couldn’t put down? I have Me Before You on my list, but besides that, I don’t have a ton that are jumping out at me to read right away.

Okay, these cookies. Stop what you’re doing and make these. Right. Now.

These are by far my absolute favorite new cookie. I’ve always been a chocolate chip cookie fan, even more so when they’re nice and soft. Huge bonus when they stay soft… psst… these do!! Left out or in a container, they’ll stay nice and soft for days!

The super soft texture brought me back to my junior high and high school days. My dad was a teacher and often teacher meetings were held in his room, since it was one of the largest classrooms in the school. Fresh coffee and a tray of freshly baked cookies were always brought in prior to the meetings and I was always able to take one. Some weeks they were so much better than others. My favorites were the weeks they were slightly underdone and ridiculously soft. Seriously good.

If you’re like me and love a soft cookie, then you absolutely must try these super soft chocolate chip cookies. They’re sure to become a new family favorite. I know it’s going to be hard to beat these moving forward!

And like always, grab one while you can because these are definitely going to disappear fast!

Super Soft Chocolate Chip Cookies

Ingredients

  • 1/2 C unsalted butter, softened
  • 1/2 C granulated sugar
  • 1/2 C light brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 3/4 C all purpose flour
  • 1 C semi-sweet chocolate chips

Instructions

  • In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in egg and vanilla, followed by salt, baking soda and baking powder. Scrape bowl as needed. Mix in flour until fully incorporated and no streaks remain. Stir in chocolate chips by hand. Chill cookie dough for at least 1-2 hours or until it isthoroughly chilled.

  • Preheat oven to 350°F. Line a rimmed baking sheet with a silicone baking mat. Scoop dough using a large cookie scoop (roughly 3 tablespoons worth of dough), spacing 2-3 inches apart on prepared baking sheet. If desired, top off dough balls with additional chocolate chips.

  • Bake for 12-13 minutes. Cool on pan for 3-5 minutes, then transfer to a wire rack to cool completely.

  • Store in an airtight container for up to several days or freeze for later.

    These really are the BEST chocolate chip cookies! I love soft cookies and have tried many chocolate chip cookie recipes. This will be my go to recipe now for chocolate chip cookies—thank you for sharing!

    Only thing I’d do different is double the recipe!😉

    The first time I made this recipe, they were AMAZING!! I have tried it again 4 more times since then and the cookies bake into flat pancakes. I have follow the recipe perfectly! I wish I knew what I was doing wrong VS what I did the first time. 💔

      So glad you enjoyed them, Marion! I can’t be sure what the issue is without being there, but a few things to consider is to make sure your baking soda and baking powder are fresh and not expired. The chilling process is key – the longer the chill, the better.

    Hi! I just made cookies via this exact recipe for Christmas.. however, the cookies didn’t turn out looking fluffy and got a little hard. I followed the recipe to a T, chilling the dough and even sifting the flour. I used the scoop and scrape method for measuring too, so I know it wasn’t an issue with measuring. Do you know what I could have done wrong? I cooked them at 350 too.

      It’s possible that your oven may be cooking hot. Double check by using a stand alone oven thermometer. If the temperature is off, adjust accordingly before baking.

    This recipe is awesome! I’ve made it twice now and the second time I added about 1/4cup of peanut butter to it and OMG! They were even more incredible. The first time I made them the only change I made was using dark chocolate chips, which think made them even more amazing. I still can’t believe how long these stay soft and fresh tasting too! This is one recipe I will keep and Continue to use.

    This is my favorite chocolate chip cookies recipe. They are known around here as the famous chocolate chip cookies. I never use a different recipe and they are always a hit!

    I don’t have a baking mat… will that make a difference?

      You can use either. If you don’t have a silicone baking mat, parchment paper is your next best option. Just keep an eye on them as they cook, as you normally would. Enjoy!
