These Crumbl peanut butter bar cookies are a tribute to the no-bake peanut butter bar recipes out there. They are made with a thick peanut butter oat cookie that is then topped with a smooth and creamy homemade chocolate frosting. This recipe gives you the best of both worlds and allows you to have a cookie that tastes just like a peanut butter cup!

If you know me you know that I have a soft spot for anything peanut butter. I mean I can literally service off of a jar of smooth peanut butter without any issues whatsoever.
So recreating the Crumbl peanut butter bar cookies was a cup of tea for me. I made sure to keep the cookies thick and soft just like the ones you would get from Crumbl then topped it with the smoothest most luscious cream cheese chocolate frosting on top.

These cookies are honestly great for any time of the year but would be even better during the holidays. I can totally see myself making minis of this recipe around Christmas and thanksgiving as well.
The cool thing about these cookies and the thing that I think personally takes them to the next level is the use of that chocolate fudge frosting. I mean, can you name a better combo than chocolate and peanut butter?! I think not!

Ingredients for this Crumbl peanut butter cup cookie recipe

- Peanut butter–Use smooth peanut butter. This recipe doesn’t use natural peanut butter so make sure to use something like Skippy of Jiffy.
- Butter– You will need softened butter for both the peanut butter cookie and the peanut butter buttercream.
- Brown sugar & granulated sugar– The combination of both sugars will give a depth of flavor to the peanut butter cookies and keep them soft as well.
- Egg– The egg is the binding agent of this cookie.
- Vanilla– The vanilla is also used to give more depth of flavor to the cookies.
- Flour– You can use AP flour for these cookies.
- Oats– This peanut butter cookie has a little oat mixed in there.
- Baking powder & baking soda– The baking powder & baking soda are used to give the cookies some height.
- Corn starch– The corn starch will keep your cookies soft and melt in your mouth.
- Salt– The salt will help balance out the sweetness of the cookies.
- Oil– The oil is used to thin out the Reese’s peanut butter chips a little.
- Cream cheese– The chocolatey fudge frosting uses just the right amount of crema cheese.
- Powdered sugar– The powdered sugar is used to sweeten out chocolate frosting.
- Cocoa powder– To get that perfect chocolatiness, we are gonna use good quality chocolate.

- Creamthe butter, peanut butter, brown sugar, and granulated sugar.
- Addin the egg and vanilla extract and mix until smooth.
- Addin the flour, oats, baking powder, baking soda, corn starch, and salt, and mix just until the flour mixture disappears.
- Usinga large cookie scooper, scoop out 8 equally sized cookie dough balls, roll them in between the palm of your hand, then gently flatten them to about 1 of an inch then freeze the cookie dough discs for 15 minutes.
- Bakethe cookies in the preheated oven, let them cool down fully , then top with the homemade chocolate fudge frosting.

Can I freeze these cookies?
Yes 🙂 I would recommend flash-freezing these cookies on a flat baking sheet until fully solid. Transfer the cookies to an airtight container making sure to separate the cookies with wax or parchment paper and freeze for up to 2 months.
Do I have to make the chocolate frosting from scratch?
I highly recommend making the cream cheese chocolate fudge frosting from scratch because homemade is always best.
But if you would rather use store-bought, I love the Simple Mills frosting. It states the best out of all the store-bought ones I purchased.
How to make catering sized Crumbl peanut butter bar cookies
To make these PB oat cookies smaller, you can make 18 instead of 9. Now instead of baking them for 13 minutes, bake them for 10 minutes instead. Frost them as you would the larger cookies and enjoy!

Ingredients
Peanut butter cookie base
- ½ cup smooth peanut butter
- ½ cup butter softened
- ½ cup brown sugar
- ⅓ cup granulated sugar
- 1 egg at room temperature
- ½ teaspoon vanilla extract
- 2 tablespoon + 1 cup all-purpose flour
- ½ cup Old fashioned oats
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 tablespoon corn starch
- ¼ teaspoon salt
Chocolate frosting
- 4 oz Cream cheese softened
- 2 tablespoon Butter softened
- ¾ cup Powdered sugar
- 3 tablespoon Cocoa powder
- ½ teaspoon Vanilla extract
- 2-3 tablespoon milk to make the frosting more creamy
Instructions
Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
Cream the butter, peanut butter, brown sugar, and granulated sugar. Add in the eggs and vanilla extract then mix until combined.
Add in the flour, oats, baking powder, baking soda, corn starch, and salt, and mix just until the flour mixture disappears.
Using a large cookie scooper, scoop out 9 equally sized cookie dough balls, roll them in between the palm of your hand, then gently flatten them to about 1 inch in thickness and bake in the preheated oven for 12-13 minutes.
Let the cookies cool down on the baking sheet for 15 minutes before transferring to a cooling rack.
Make the cream cheese frosting
Cream the butter, cream cheese, and vanilla extract together until smooth. Mix in the powdered sugar until combined.
Sift in the cocoa powder, then add in 2 tablespoon milk and mix again until fluffy. If the frosting seems too thick, add in one more tablespoon of milk.
Frost each cooled down cookie with a thick dollop of frosting, chill for 30 minutes or more, then enjoy!
